I was having lunch with a girlfriend last week and she told me she had chicken salad made with avocado recently and how delicious it was…she said, ‘why haven’t I thought of doing this before?’
Since avocado makes everything better (right?), I decided to give it a try and O.M.G. I cannot believe how good it is! Maybe I’m late the game on this one but this is one of my new favorite things. AHHH-mazing. You gotta stop what you’re doing and make this NOW.
Here’s how….
Ingredients:
1 large organic chicken breast, shredded
1 1/2 large avocados or 1 large and 1 small, diced
1/4 red onion, diced
2 Tbsp fresh cilantro, chopped
2 Tbsp Homemade Mayo
Juice from 1 lime
Salt and Pepper, to taste (I like a large flake salt for this like Maldon Sea Salt Flakes)
Serving suggestion - Siete grain-free tortillas, toasted to golden brown (cassava shown here) or Siete Lime tortilla chips
Directions:
I boiled my chicken breast until cooked through and shredded. This can be done ahead of time to save time. Add chicken, avocados, red onion, cilantro, mayonnaise, lime juice, salt and pepper to a large bowl and mix well. Taste and add more salt and lime juice to taste. If you dislike cilantro, use parsley.
This Avocado Chicken Salad can be eaten any way you want… pick up a fork and eat it all on it’s own, on a sandwich, on a green salad, with tortilla chips, or the way I did it — with browned Siete Cassava or Almond Flour tortillas. I browned them in a skillet sprayed with coconut oil (or any high heat cooking fat) over med-high heat. Ghee would work well too. Watch closely and flip, remove when golden brown but not too crispy that they crack when bit into. I then cut them in half and served along-side the salad and ate the Avocado Chicken Salad open face on the tortillas. Delicious.
I find Siete grain-free tortillas in the frozen section of Sprouts…not by the frozen bread though…over by the ice cream! I give you that tip because they can be a little hard to find! Sprouts also carries Siete grain-free tortilla chips which are delicious and the Lime flavor would be perfect with this.
