Lime Drop cocktail

I have always been a fan of a good lemon drop cocktail, but they can be pretty strong... and sometimes too sweet.  I can't drink like I used to in my younger days but still enjoy having a nice, cold cocktail with my husband or girlfriends.  Recently, in Maui, us girls made some wonderful "lady drinks".  My friend coined that term meaning 'not meant to get you smashed'!!  After returning home, I had some limes and threw this lime drop cocktail together on a warm evening and it was SO good!!  It's only a few ingredients and is so light and refreshing.  You could serve it as the recipe states above and serve it in a pretty martini glass, but I like to pour it over ice and add a little splash of soda water.... it's a very proper "lady drink".  I think my friend would approve!  GREAT summer cocktail... Enjoy!

  • 1 oz vodka
  • 1 oz fresh lime juice
  • 1 oz pure cane simple syrup (adjust to your liking)... I'm going to try to make my own out of honey soon, I'll comment on this if it works!

Add all ingredients to an shaker filled halfway with ice.  SHAKE WELL.  Pour.  Sip.  Smile.

Paleo Fudgy Brownies

My husband was craving something sweet last night, so I whipped up these brownies….they are very easy to make…and they did the trick.  NO PROCESSED SUGAR, NO FLOUR, NO GUILT!  Now, if you are a fan of a more "cake-y" textured brownie, you might want to try another recipe, because these are the fudgy, moist and chewy type.  But by adding another egg you could probably get a more cake-like texture.  For me, the chewier the better.

It's funny, because while these were in the oven I remembered I still had my old box of "Ghirardelli Triple Chocolate Brownie Mix" from Costco in my pantry from the days when the kids weren't off at college yet.  I hauled it out to inspect the label of ingredients.  Here's what I found...

This first ingredients are SUGAR and FLOUR.  If those are listed first, it's mostly that.  It had a long list of other things including canola/soybean oil, dairy and "artificial flavor".  NO THANK YOU.

Here's the ingredients you will need for these Paleo-friendly brownies...

  • 1 cup 'Grade B' maple syrup
  • 3/4 cup raw unsweetened cacao powder or natural cocoa powder (I found the one pictured at Sprouts in the "raw" food section)
  • 1 cup unsweetened unsalted almond butter
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 egg
  • 1/4 cup carob chips or dark chocolate chips (any other chocolate chip of your choice…they have some grain-free, dairy-free chips available. At Whole Foods they carry chocolate chips sweetened with stevia…  they're GOOD!)

Preheat oven to 325 F.  In a pan on the stove, heat the maple syrup on low heat, stir in the cacao powder and stir until smooth.  (It won't mix until the syrup is warm.)  It will look like this...

Once it gets warm, it will melt in like this…just stir until smooth.  (Cacao and cocoa can burn easily, so keep stirring!)

Remove from heat and add the rest of the ingredients and mix thoroughly.  Your arm will get a little bit of a workout by the end…you'll have to stir harder to get that almond butter mixed in good!  Pour the mix into an 8" x 8" pan greased with coconut oil or olive oil.

Bake for 40-50 minutes.  It won't really look totally done when it comes out.  They will set up as they cool.  I put the pan on a wire rack to cool.

My husband wasn't patient enough to enjoy a piece at it's full potential… it wasn't set up yet, too gooey...but I let him have some anyway!  Seriously, these need to cool for about 5 hours for them to be the right consistency.  I tried one this morning :)  and it was SOOOO good.  VERY chocolatey, chewy and fudgy.  Cut them into small squares, a little goes a long way…they are rich!

If you like nuts, add some!  I might even try a little  coconut next time!  Enjoy!!  After this success, I feel confident throwing away my "box mix" now… I had three teenage boys here today and they were "teenager approved"!!  Mmmmmmmm.

Miss bread? Make Paleo Sandwiches!

Do you miss having a sandwich for lunch since you've given up bread?  I loved  a good sandwich and was craving one the other day… so I made up some some sandwiches "protein style" like In-'N-Out Burger does it!  My husband loves pastrami and I love chicken or turkey, so I picked up some good meats at Sprouts in their deli section.

Just take some iceberg lettuce, you could also use cabbage or romaine, and carefully unwrap the leaves and wash and them.  Pat them dry.  Lay them on a plate and add whatever you like that's Paleo-friendly!  Meat of your choice, bacon, tomato, avocado, mustard, goat cheese… I used goat brie and it was delicious.  Wrap the lettuce around the ingredients and secure with a toothpick.  Just watch out for the toothpick as you bite into it;)

I added some kale chips and this lunch completely satisfied my craving for a sandwich and chips!  :)  …and I didn't even have to cheat.

Guide to Sweeteners

With all the sweeteners out there today, it's no wonder people are totally confused.  You have the "blue, pink and yellow" people saying that they offer "no calorie" sweetness, but most of us now know they are completely artificial (who knows what the heck is in that stuff).  You have the High Fructose Corn Syrup commercials saying they get a bad rap...with the pretty mom sitting in a pretty corn field telling you that "sugar is sugar".  I wonder if that actress feeds it to her kids...

Have you actually looked at packaged foods labels to see what sweeteners are actually in there?  Even in products that don't taste sweet?  They creep into food everywhere these days and it's time for a change.  If you follow a Paleo lifestyle, sweeteners should not be considered "food" or nourishment.  With that said, my hope is to give you some clarity on how to make healthier, smarter choices because we all want a "treat" now and then...I will keep the list short and simple for you.

The GOOD - Use Sparingly (natural):  Use organic whenever possible.

  • cane sugar, raw sugar, turbinado sugar, cane juice, coconut sugar, fruit juice (real), honey (raw), maple syrup (grade B), molasses, palm sugar, stevia (green leaf or extract), dates, date sugar, brown sugar

The BAD - Not recommended (natural):

  • agave, agave nectar, barley malt, brown rice syrup, caramel, carob syrup, corn syrup, dextrose, ethyl maltol, fructose, glucose, high fructose corn syrup, lactose, light brown sugar, maltitol, malt syrup, mannitol, sorbitol, sucrose, xylitol (or other raw alchohols, they end in "-ose")

The UGLY - never consume (artificial):

  • acesulfame K (Sweet One), aspartame (Equal, Nutra-Sweet), saccharin (Sweet 'N Low), stevia: white/bleached (Truvia, Sun Crystals), sucralose (Splenda)... In a word, these are POISON, seriously....stop it.

All caloric sweeteners have about the same number of calories (16 per teaspoon), but they are NOT created equal... You must consider how it's made, where it's used and how your body processes it.

Here's what you need to know.  The more highly refined a sweetener his, the worse it is for you.  Artificial sweeteners and high fructose corn syrup are highly refined.  They are very modern, factory made products.  Honey, maple syrup, green leaf stevia and molasses are all much less processed and have been around for hundreds of years.  With honey, almost NO processing is necessary... this is my sweetener of choice.

Many of the foods that have been made low or non-fat have added artificial, low-quality sweeteners in them - even if they aren't sweet!  Avoid them.

Sweeteners like high fructose corn syrup and agave nectar require processing by the liver before it hits your blood stream.  This used to be viewed as a better option for diabetics, but is now understood to be a complicated issue and that taxing the liver excessively with these types of sweeteners can be harmful to your health.

Fructose is the sugar in all fruit.  When we eat it, the micronutrients and fiber contents of the fruit support proper metabolism of the fruit sugar.  Whole foods win again!!

I hope this helps clarify some of the many, many sweeteners on the market today and will help you make healthier choices when you choose your treats! :)

Nespresso: How to Recycle those capsules!

A Nespresso espresso machine was always intriguing, especially after tasting it at Macy's...but what stopped me for so long was those darned capsules!  I already had a Keurig…and loved it...but those K-cups were always a little bit of a thorn in my side!  It made me feel guilty, all those little plastic cups going in the trash!

Once I went Paleo, I quit coffee for a bit because coffee without cream and sugar wasn't worth it for me.  So, that's when I started drinking Ginger Lemon Tea in the mornings…which I still do, and it's amazing.  But it made me do some research because I'd heard you could recycle the Nespresso capsules.  It couldn't be easy though, could it?

Once I learned more, Nespresso is actually a really cool company.  Not only do they encourage you to recycle the capsules, they make it easy for you.  They also use those  recycled aluminum capsules to make parts on their espresso machines.  That's partly why I chose the Nespresso Pixie Espresso Maker.  The side panels on my machine…the colored panels that come in different colors…are made from recycled capsules.

I also thought it might be a pain to GET the capsules because they aren't sold in stores, you have to get them from Nespresso (or another online source).  I was wrong, it's really easy!  They have an app and great customer service, so if you want to talk to someone you can.  If you order a certain amount, the shipping is free.  It arrives at your door super fast.  It's actually cheaper to order directly from Nespresso than Amazon!  When you place an order, you just have to tell them you want the "Recycle Bag" sent with your order.  I did, and they sent me two!  They have UPS pre-paid labels on them and when you've collected 200 capsules, you just seal it and send it!  Simple!  200 capsules take a while to rack up too…so you don't have to deal with it often.  I made it easy on myself because I also didn't want to count out 200 dirty capsules when the time came...

Here's what I do…I hang the bag on a doorknob in my laundry room, which is near my kitchen.  I put a post-it near it like this…every time I have 10 capsules (that's how many the reservoir in the machine holds), I dump them in the bag and make a 'tic' mark like this…when I have 20 marks = 200 - I seal it and send it off!  No extra counting!

I love it…no guilt, I'm doing my part for the environment.  :)  AND I haven't' even mentioned how spoiled I am now with the quality of the espresso it cranks out each and every time!!  My husband and I LOVE this machine.  It puts the perfect "crema" on top every time!  Do I sound like an espresso snob yet?  :)  I add raw honey instead of sugar now which tastes amazing.  It's great alone, but sometimes I use a little of this coconut creamer, much healthier than the half and half I used to use...

So now I enjoy my Ginger Lemon Tea as soon as I wake, and sometime during the day I have an espresso "treat" and it is SO satisfying.  Thanks Nespresso!  If you're on the fence about getting yet ANOTHER machine that takes "pods"…hopefully this will shed some light on it for you!  Go for it…you won't regret it. :)

Tequila, Lime & Green Onion Coleslaw

This is SUPER delicious, SUPER easy and SUPER healthy...

I had never been a big fan of coleslaw until I had it at a restaurant in downtown Petaluma when I first moved here….where they made it fresh.  I didn't know it could be SO good!  This recipe reminded me of that, only better!  It's light and tangy…creamy and crunchy…a great "summer" side salad!

Ingredients:

  • 1/2  cup mayonnaise
  • 4  green onions, thinly sliced
  • 3  tablespoons lime juice
  • 1-2  tablespoons tequila (depending on how much you like the flavor)
  • 1   2-pound green cabbage
  • Sea salt to taste
  • Fresh cracked pepper to taste
  • Smoked paprika to taste (optional)
  • Cayenne pepper to taste (optional)
  1. In a large bowl, whisk together mayonnaise, green onions, lime juice, tequila and seasonings.  Taste and adjust seasonings, remembering this salad should be seasoned relatively assertively because when the cabbage is added the flavor will dilute.
  2. Remove any ugly or damaged outer leaves from the cabbage.  Cut the cabbage in half lengthwise.  Cut out the fibrous core.  Place the cabbage cut side down and slice it into very thin strips.
  3. Add the cabbage to the mayonnaise mixture.  Toss to combine.
  4. Refrigerate and let marinade at least 30 minutes before serving.

This recipe was based on a recipe from "Primal Palate" but I "tweaked" a couple of things and improved upon it;)
