What I'm focusing on in October

It is October 1st today and it always feels like a new beginning when a new season is upon us.  I happen to love Fall because it brings the best feelings with it.  I get so excited about the holiday season approaching, layers, sweaters, boots & everything Fall fashion, snuggling up with a cup of tea and a good book.... so many things that illicit that feeling of Fall.  Now, I live in California so we don't get a huge change in seasons, but I still love it just the same.

You know how much I love a 30 Day Discipline, but this month I'm not doing a strict challenge...but instead I am focusing on a couple of things this month that I want to share with you.  Simplifying my life....and Gratitude.  

I recently read Marie Kondo's  bestselling book "The Life Changing Magic of Tidying Up" and I must admit, I'm excited about putting what I've learned to use. I'll admit, clutter is the bane of my existence.  Especially paper.  I hate mail.  I hate filing.  I've run out of filing space.  So guess what?  It piles up.  My "piles" are organized and I know where everything is, but it's just too much stuff!  I've attempted different systems that haven't worked for me.  It causes stress when I look at it because I know I need to find a solution....but didn't know how.  Until now...

As soon as I started reading this book, it made so much sense to me why I'd been "rebounding", as she calls it.  It seemed like every time I got my house cleaned up...it would be a mess again in no time.  Now I understand why.  I've never completely decluttered before putting things away.  The areas of my home that don't get cluttered and stay clean are my living room and my kitchen.  There are not too many items and they all have their place.  My closets and my paperwork is a different story...but not for long because now I have a plan of attack.

I used to think it was a storage problem.  There seems to be a storage solution for everything  these days.  I walked into the Container Store once and left because I was too overwhelmed and didn't know where to start.  We even got our master closet completely redone with all the fancy organizers....and I still can't keep it organized for long.  Marie Kondo explains that you must declutter first, by category, in a particular order.  There's a method to her madness that makes sense.  She claims that if you follow her method, you will be free of clutter... forever.

She explains how tidying by category, not location, works like magic and explains exactly what to do.  Once you declutter all the categories, then and only then do you find an appropriate place for everything... and you don't need any fancy storage containers to do it!

By following her very specific tidying order, you get better at discarding as you go.  Have you ever attempted decluttering only to find yourself sitting in the same spot, hours later, looking at old photos...taking a trip down memory lane instead of getting anything done?!  I have!  With her tidying order, by the time you get to those items....you'll be so good at decluttering you'll be tossing stuff out left and right!

She wants you to only keep items in your home that spark joy.  Everything else goes.  She says that her clients have never rebounded once their homes are tidied with this method.  They live in a state of calm, relaxation and joy...because their house is in order.

My husband and I have begun putting this book to the test.  We have both read it and are BOTH equally excited to simplify our life.  The first category is clothing, namely tops.  I cannot even tell you how many items we are discarding...a LOT.   I'll keep you posted on how things are going...I'm excited.

The next thing I am going to focus on this month is Gratitude.  I'm going to make a conscious effort to feel grateful for all of the amazing things in my life.  It's easy to slip into a place where we take things for granted and I'm going to pay more attention and remember to appreciate them and show my gratitude daily.  If you try this, you'll start seeing your life truly change for the better.  By FEELING gratitude, it's one of the fastest way to put the Law of Attraction into motion...and things will start showing up in your life.  Now remember, you cannot show gratitude while expecting something in return.  Just truly appreciate and feel how that FEELS.  (click on the link above to read my post and learn more about Law of Attraction.)

You can do this in different ways.  You can send a thank you card.  I keep a stack of cute plain Thank You card on my desk to remind me to send them to people I appreciate.  Yes, it means so much more to take the time to hand write it and send it snail mail!  You can also try keeping a gratitude journal and writing a few things in it daily you are grateful for.  They can be big or small...as simple as "I feel grateful for my health today."  "I feel grateful for my amazing friends in my life."  "I feel grateful for the food I have to eat."  Whatever you are feeling.  When you start your day this way, it can change the outcome of your entire day.  

What are you focusing on this month?  Does this inspire you to choose something?  Anything?  I hope so.  It's important to be working toward something and growing.  The goal isn't to be better than anyone else.  The goal is to be better than we were yesterday.  Happy October!

Give What You Want to Come Back to You

For those of you who have been following me for a while know how much I love the Law of Attraction and I'm very aware when it's working in my favor.  Today was one of those moments that just made me smile and I wanted to share it with you.  It may seem small...but it's significant.

I have some mentors that have come into my life that I look up to so much and have taught me so much just in the last couple of months.  I was writing a comment to one of them this morning just sharing my appreciation for her and told her that it's going to go on my goal board to meet her one day.  I was just filled with gratitude and appreciation in that moment.

Not five minutes after I wrote her... I received an email from one of my readers that I don't know.  I wanted to share it with you because what you put out into this world, will come back to you when you least expect it.  

"Hi Shannon,

I feel like we would be the best of friends.  I love your personality and your outlook on life.  I am about to start the Whole30 again and hope to make it through the whole 30 days this time.  

I love the recipes that you have posted and have tried them.  Will you ever do a cookbook one day?  I'm so nervous about starting my Whole30.  I have been so unhealthy for so long, that I'm not sure where to start, but I know I need to do something.

Wish me luck and I hope to meet you one day just because your posts bring a smile to my face and you are so down to earth.

Thanks for taking the time to read my email."

I won't share her name of course to keep her anonymous to my other readers, but do you recognize what happened there?  We never know who we are inspiring.  I truly believe that SHE will have good come back to her too when she least expects it.  

It's hard to call yourself an expert at something.  But guess what?  We are ALL an expert at something, so we have to get over that.  We all have something we can help others with.  Everyone is at different levels on their journey.  

The biggest thing I hope you take away from this.... Don't ever GIVE with an expectation of something in return.  When you GIVE with genuine love in your heart, it will come back to you tenfold in unexpected ways.  We all WANT things in our life.  Start GIVING what you want, ithout expectation, and it will just come back to you;)

Bonus tip:  When we are feeling "lack" in our life, it is in our nature to hold on to what we do have with all of our might.  This is actually the times when we need to GIVE MORE.  I know it's hard to do sometimes, but give it a try and see what comes back to you.  It's just how flow works.  

I always chuckle a bit when I hear someone say, "I don't believe in the Law of Attraction".  It doesn't really matter if you believe in it, it's still happening every moment.  It's as much of a law as gravity but people have a tougher time accepting it because it's not as obvious to us as our feet on the ground.  It doesn't mean it's not true.  Some people give up because things aren't manifesting quickly enough for them.  

The coolest part of what happened this morning, was how QUICKLY it happened for me.  When we are in a place of resistance, we cannot receive.  When we release resistance, things will flow to us easily.  The easiest way to get into that place of non-resistance, is through the feeling of appreciation and gratitude.  

I encourage you to read my blog post on The Law of Attraction, especially if this is something that is intriguing to you, but you don't quite understand how it works yet.  I try to simplify it in that blog post, because it can be a pretty deep subject.  Enjoy!  ...and go give today, and everyday, and see what starts coming back to you.

German Potato Salad

German Potato Salad

German Potato Salad


I didn't grow up on German Potato Salad.  I grew up on a very traditional creamy Potato Salad.  My husband loves German Potato Salad and has been asking me to make it for years.  It's hard for me to get excited about cooking something I'm not positive I want to eat...so I hadn't done it.  Until now.  

I saw a cooking show a while back with an older woman making German Potato Salad.  I'd never seen her show before, so I don't know who she was.  It got my attention because it looked really good.  Maybe I had been missing out.  I thought this would be worth a try....so I grabbed a pen and paper and scribbled down a few notes.

Well, that was about a month ago and as I looked at my post it note with some scribbles on it....I realized this did not a recipe make!  So I decided to wing it.  How hard could it be?  Going off my few notes and my memory, this is what I came up with and I must say it was a huge success!  My husband loved it and I went back for seconds!  I am so thrilled that it's blog worthy to share with all of you...Enjoy!


GERMAN POTATO SALAD:

Ingredients:

  • 2-3 lbs Yukon Gold Potatoes - peeled and cut into 1/4" slices
  • 4 pieces bacon - cut into 1" pieces (use sugar-free bacon for Whole30)
  • 1 small onion or 1/2 large onion - I used yellow - cut into thin strips
  • 1 bunch of chives - finely chopped
  • 1/4 cup white vinegar
  • 2 cups chicken stock
  • 2 Tbsp grainy dijon mustard
  • Salt to taste

Instructions:

  1. Prep your potatoes and put them in a large pot.  Fill with enough cold water to cover by an inch or two and bring to a boil.  Bringing the potatoes and water to a boil together will ensure even cooking.  When it comes to a boil, set timer for 5 mins.  
  2. Meanwhile cook bacon pieces in a large cast iron skillet over medium high heat.  I use this splatter screen to help with grease splatter, works great to keep my kitchen clean.  Drain bacon on paper towels when done and set aside.  Keep bacon fat in skillet.
  3. Cook the onions in the bacon fat over medium heat until translucent.  Yep...this flavor party is about to get started.
  4. Keep an eye on your potatoes.  They are done when tender, but not mushy.  Don't overcook or they will mush when mixed with the other ingredients instead of staying in intact slices.  A little breaking is fine, but this is not mashed potatoes!  Drain when done and put back in the pot.
  5. ADD the chicken stock, vinegar and mustard to the onions in the skillet and mix well.  (Yes, keep that bacon fat in the pan for flavor;)  Heat through.
  6. Pour the liquid over the potatoes, mix carefully and set a timer for 15 minutes to allow the potatoes to absorb the liquid.
  7. Add the crumbled bacon pieces and chives and mix carefully.  Serve at room temperature.  The liquid will continue to absorb the longer it sits.  Salt to taste.

Note:  I made this ahead of time and kept it off the heat in a covered 5 quart Le Creuset pot until dinner was served and it worked great.


I hope you'll try German Potato Salad, even if you're loyal to your creamy potato salad, like me... I think you'll thoroughly enjoy it.  It's perfect for parties, picnics and BBQ's because it doesn't need to stay chilled like creamy potato salad.  BUT, it you are looking for a creamy potato salad to try, or if you're not quite ready for the German variety quite yet.... try my creamy Warm Red Potato Salad.  It's to die for.

Mango Guacamole

Sometimes I try a new recipe and it's so awesome that I wonder how I survived without it in my life before!  This Mango Guacamole is one of those recipes.

This recipe comes from a fellow Whole30 alumni, Dolly of Unapologetically Living who I had the pleasure of meeting at a Paleo luncheon at Mission Heirloom in Berkley.  (If you get the chance to go to this amazing Paleo restaurant, do it!  It's amazing.)  


MANGO GUACAMOLE

Ingredients:

  • 1 ripe mango, diced
  • 1 - 2 avocados, diced (depending on size)
  • 1/2 an onion, diced (I used red onion)
  • 1/4 cup chopped cilantro (optional)
  • 1 jalapeno, finely chopped (optional)
  • 1 lime, juiced
  • Salt to taste

Directions:

Place all ingredients in a bowl and combine.  Adjust ingredients to your liking.  Enjoy.


Over on Instagram, @dollyessfit has posted such pretty pictures of this mango presentation... I had to give it a try!  It also makes it easy to dice.  To do this, cut the "cheeks" off the mango (two halves on either side of the pit) and slice a crisscross pattern without cutting into the skin.  Then fan it out like this!  Pretty, right?  Then you can just scrape the diced pieces into your bowl. 

Feel free to adjust any of the ingredients to your liking.  I happen to like more avocado than mango in this guacamole, so added extra.  This is delicious on everything.  My husband and I dove into it with plantain chips but we both can't wait to try it piled on top of a burger!

Mint Lemon Drop

I'm covered in paint.  It's hotter than usual here.  I needed a refresher after doing some painting....I'm converting a room into my home office which is really exciting!  I posted this on Instagram and Facebook, but it's too good not to add it to the blog!

I put a twist on the traditional Lemon Drop!  I added mint....& served over ice with extra sparkling water.  Here's the post from Instagram...

✨ 1 1/2 oz vodka (omit if you want a "mocktail"

✨ 1 oz pure cane simple syrup

✨ juice from 1 lemon (2 tbsp)

✨ 4 large mint leaves (torn up)

✨ sparkling water

Fill a shaker 1/2 way with ice (I used 1/2 cubes, 1/2 crushed).

Add all ingredients EXCEPT the sparkling water.

Muddle the ingredients to really crush up the mint (if you don't have a muddler you can use the end of a wooden spoon)

Shake vigorously & pour into a glass (I used a large stemless wine glass. (I poured 1/2 without the strainer to get some mint & ice, then strained the rest.

Top with sparkling water!

Enjoy! So tasty & refreshing!

What's Your Word?

As I was on my first stroll through the BlogHer Conference Expo Hall in New York City recently, I came upon a booth that was making jewelry...or so I thought.  They asked "What's Your Word?"...and upon closer inspection I was intrigued, because they were dong so much more than just that...

The company is called MyIntent and is lead by Chris Pan who I got the pleasure of meeting and talking to.  His mission for the company is to be a catalyst for meaningful conversations and positive energy.  He explains how they "are not a jewelry company - they are an intentions project".  They believe "there is a purpose within each of us and we want our efforts to encourage people to share more truth and inspiration with each other".  They put your word, yourintent, on a bracelet or necklace to be a positive daily reminder for you....as well as spark conversation with others.

He began by asking me "What's your word?", then made it for me, right there, as I waited.  I gave the word I chose some thought because I took it very seriously and I wanted to choose something that would truly inspire me daily and be that little reminder of my intent.  As someone who reads and writes about Goal Setting and The Law of Attraction, I knew the power this word I chose could have for me.

After careful contemplation, I ended up choosing to get HWS - short for Happy WifeStyle.  I chose this because for the past 15 months I've been working on something that's mine, and mine alone....for the very first time.  I'm working on a goal of building my blog and starting something from scratch that I can be proud of.  A place where I can inspire and help others to be happier and healthier.  A place where people, especially women, can come to feel empowered to get exactly what they want out of life.  It feels amazing to have finally found my passion and I want my intent to remind me to keep moving toward those goals every single day.  I'm so thrilled with my choice because when I look at it, it's a true reminder of my intent...it makes me smile and mades me want to work even harder.

This photo below with the simple word "mend" makes me think of my older brother right now.  His wife was diagnosed with lung cancer two months ago.  Within one month of diagnosis she lost the battle.  She was his rock and he's having an incredibly hard time.  Just as I'm posting this, I think I need to send him one with this word... a daily reminder that it will take time to mend.  (I didn't intend to write about this....see, these truly inspire thought!)
