We were at a friend's house recently and they never disappoint with their burgers!! Well, this one was over the top with goodness...because more bacon is better!!! She made "bacon lattices" and piled them high with amazing toppings, she always cooks Paleo so even though it looks sinful, it was actually all healthy! We all attempted to pick them up and eat them, but ended up having to bring out the forks!!
She sliced pre-cooked nitrate-free bacon from Trader Joe's into thinner slices lengthwise and made little "lattices" out of them. She put them on a wire rack to heat and crisp them...also this made them lock together so they stayed like that. She positioned them over the baking sheet in the oven with potato slices that she used as "buns" below them. Yes, they dripped down onto the potato slices!!
When the burgers were done and grilled, this is how we assembled them.... she placed lettuce, red potato slice, burger, goat cheese brie, tomato, a little drizzle of French dressing on the tomato, avocado, homemade olive oil mayonnaise, and topped it off with the bacon lattice!
It was SO delicious!! I am totally going to recreate this....putting bacon on a burger is now even more fun!! :) It makes it so pretty on an open face burger!! Thanks Steph! You are always so creative in the kitchen!
Update.....So, that was last night....and here it is Sunday and we are enjoying the pool on this hot day and my husband asked if I wanted him to fire up the grill! I said yes, I have chicken to BBQ! He said he wanted more burgers!! :) So, since our son is home from college and he didn't get to have the "lattice bacon"....he LOVES bacon so much that I thought ok....let's try this! So, I didn't do the potato and all the "fancy" that my friend did, but these turned out AMAZING! I used nitrate free bacon that was NOT precooked. I just cut up the raw bacon, cut it in half first, then in half lengthwise. I used 5 x 5 strips and put it in a 400 degree oven on a cooling rack over a baking sheet. It took about 20 - 30 mins. I just put some goat cheddar on them, BBQ sauce and put them in iceberg lettuce wraps! My husband loved that these were easy to pick up and eat. Our son LOVED his burger!!! "Protein style" success!!!!!
