I made an apple pie a while back and the crust turned out so fantastic that I decided to use the same crust for this fruit pie. I had a peach and a few pluots (plum-apricots) and also had some homemade peach-pluot jam that my friend made from scratch in my pantry...so I thought I'd give it a try! A friend of mine from high school used to make this amazing peach cobbler years ago that was to die for!! I don't think it was all that "Paleo-friendly" though, so I wanted to tweak this pie with that inspiration in mind....
First, I made the crust from my apple pie recipe...(click on this link for the crust). This time, I greased and pressed it into a pie pan as soon as I made it.
I peeled and sliced the peach. I peeled and diced up the pluots. You could use any fruit you like!
I put the fruit in a bowl, added a Tablespoon of fresh lemon juice, sprinked some coconut sugar in (about 1 Tablespoon), and mixed in the jam. (Use a jam that matches the flavors of your fruit! Just pick out a high quality one with low sugar.) I poured it into the pie shell....I was beginning to think this was going to be TASTY!! :)
This is the part I was looking forward to....I make a crumble topping for my banana ice cream and my berry ice cream that gave me an idea of how to make this crumbly topping... I put about 1 cup of raw almonds in my Vitamix. You can use a food processor... Pulse until it's fine, but not yet flour...this is how mine looked when I stopped....
Put the chopped almonds in a bowl and add about 2 Tablespoons of Pure Maple Syrup...I use Grade B. Add 1 teaspoon pure vanilla extract. I added a pinch of sea salt. Mix well. It should be this consistency...
Sprinkle the topping evenly on top of the pie....sprinkle with a little cinnamon...
I pushed down the sides of the crust so it was just slightly higher than the filling. Bake at 350 degrees until crust is golden... about 30 minutes.
Let it set up and cool slightly before serving so it's easier to cut into slices.
You cannot have fruit pie like this without the "a la mode".... so I got some of this vanilla ice cream made with coconut milk and had no added sugar! :)
YUM!! My stepson that is home from college had about 6 friends over in our pool to cool off as I was making this pie. As they were leaving, he saw the finished pie before going in the oven... I have a feeling he'll be back soon;)
This fruit pie turned out VERY good! The filling was fruity, a little tart.... the topping was nutty and crunchy....the crust was almost "short-bread-y"... the ice cream made it SO PERFECT...especially when the pie was served a little warm!! Husband approved!!!!!!
