Green Chicken

I just had to try this recipe for "Fiona's" Green Chicken out of the Nom Nom Paleo cookbook...it looked so interesting!!  I'm sure glad I did, it's so different from any other marinade I've had before!  This green chicken marinade is made from all fresh ingredients and it smells amazing.  It's a Thai-inspired, green herb marinade...that can be used on more than just chicken!

You will need:

  • 1 medium sweet onion, coarsely chopped (about 1 cup)
  • 1  1/4 cups packed fresh basil
  • 1 cup packed fresh cilantro (leaves and stems)
  • 1/4 cup packed fresh mint
  • 3 garlic cloves, peeled
  • 1/4 cup Paleo-friendly fish sauce
  • 2 tablespoons apple juice
  • 1 teaspoon Aleppo pepper or red pepper flakes
  • 1/2 teaspoon freshly ground black pepper
  • Finely grated zest from 1 medium lime
  • 3 pounds skin-on chicken drumsticks or thighs
  • 2 limes, cut into wedges (used when serving)

Do this....

  1. In a blender, puree the onion, basil, cilantro, mint, garlic, fish sauce, apple juice, Alepppo pepper (or red pepper flakes), black pepper, and lime zest.  The mixture should be thick and smooth, with no chunks.  Taste and adjust for seasoning.
  2. Place the chicken in a gallon size zip-top bag.  Pour in the marinade and squeeze out the air in the bag before sealing.  Marinade the chicken in the refrigerator for at least one hour and up to one day.
  3. Take the chicken out of the fridge at least 30 minutes before cooking so it can come up to room temperature.  Remove the chicken from the bag.
  4. If oven roasting:  Preheat oven to 400 degrees F with the rack in the middle position.  Then place a wire rack atop a foil-lined rimmed baking sheet.  Arrange the chicken in a single layer on the rack, and roast for 35 to 40 minutes, flipping the bird (ha!) midpoint.
  5. If grilling:  Arrange the marinated chicken on a medium-hot grill and cook for about 25 minutes, turning every 5 to 7 minutes.
  6. The chicken's ready when the internal temperature reaches 170 degrees or when juices run clear.  Serve with lime wedges.

Frenchie Friday - Stella got her first BarkBox!

Stella is having a very Happy Frenchie Friday today....she received her very first BarkBox!  How exciting!  She loves opening packages...

This BarkBox is a Halloween one!  Since she's a Bully, she's not scared;)  It was all packaged so cute...

She found her favorite right away, the blue fishbone squeaker toy!!...she pulled it out of the box very carefully, then ran away with it to check it out on her own for a moment...before heading back to see what else she got.

This one is so cool, the Ghost toy.  She went crazy for the noise it makes....it sounds crinkly like paper!  She took it and shook it!!

Why I didn't get married until I was 38 years old

I read an article today that really resonated with me.  A woman wrote a controversial article about marriage that many people are commenting on. Many people don't agree with what she wrote....but I do.  I'll share it with you in a moment...

When I was in my 20's and 30's I honestly could count on one hand how many happy couples I knew.  Those couples that truly loved each other, respected and supported each other, were honest with each other, were passionate with each other, shared their lives together as a team....that you just knew would grow old together.  I started thinking it was a rare thing to find.

But why do we, as women, still want to get married so bad?  I know there are exceptions...but most do.  Sometimes so bad that we are willing to forego...sacrifice even...some things that are necessary for a truly happy marriage.  We then wonder why we end up disappointed...

I say this because it happened to me....well, it almost happened to me.  I got caught up in the hype.  I got engaged at 27 years old.  It became about "getting married" that excited me.  I got a gorgeous dress.  The country club was reserved.  The band was booked.   The bridal shower was given.  Gifts were received.  The invitations were sent!  I was one month away from walking down the aisle....when something hit me like a ton of bricks.  I had planned the perfect wedding.  I had not planned the perfect marriage.  I knew in that moment....If I get married to this man, I will get divorced.

This is not a good feeling.  I thought I was stuck.  I thought it was too late.  How could I possibly stop this now??  It was one of the hardest things I've ever had to do in my life, but I stopped it.  In the most tactful way I could, I called it off.  I felt like people weren't going to understand.  I felt like people were going to be so upset with me.  Guess what happened?  I got so much support...even from his family who I was extremely close to.  In the end...it was the best decision I ever made.

That experience made me realize I was stronger than I thought I was.  I realized I wasn't going to settle.  I learned to love myself.  I got to know myself.  I decided what I wanted in my life and started making changes in that direction.  I started reading books about the Law of Attraction.  I decided it was more important for me to be happy than to be married.  I became just fine on my own.

When I was 31 I met the man I'd been waiting for my whole life.  I actually shouldn't say it like that...because I wasn't "waiting" for him anymore.  I believe he came into my life once I put out into the universe what I truly wanted and was happy regardless.  This was a man I would marry.

This brought me into a new scenario I hadn't thought of before.  What if I found a man I would marry....but he didn't want to marry me?  He loved me.  He was committed to me.  We were happy.  We had everything that I would want from a marriage, even a ring...but we didn't have that piece of paper.  I could understand why.  He had been married before and he said he never wanted to get married again...it had given him a run for his money...literally, and I could understand that.  At first, I wasn't sure I liked it, but I came to terms with it.  I didn't want kids of my own and I had made the decision to be happy...and I was.  I could leave just with hopes of getting married someday...or stay with the man of my dreams.  It became an easy decision to stay.

We lived seven happy years this way.  I never brought up marriage again.  We lived together and I was helping him raise his two sons which became such a light in my life because I love both my stepsons so much.  I can't imagine my life without them.  It was actually quite perfect.

One day, on my birthday, I got the surprise of my life.  He proposed to me.  I was honestly shocked.  I started to cry with joy before I could even say yes.  Of course, I was elated, but not because I was getting married...but because I was marrying him.  Knowing how much it meant for him to come to that decision on his own meant so much more than any wedding.  We got married five months later.  A small wedding of only 35 people.  It was the perfect day.  

I love that it happened this way for us.  It was worth the wait.  I knew with all my heart that he wanted to marry me.  I believe that we'd still be together even if we hadn't married.  We are together because we want to be, not because we have to be.  We married for the right reasons.  I believe a foundation like that can stand the test of time.  Marriage takes work.  You have to treasure it and never take it for granted.

We spend a lot of time with some couples that are truly happy.  When we are with them, there is no gossip, there is no drama, there is none of that.  It's such a positive environment and I'm so grateful to have people in my life that bring us up, rather than bring us down.

I sometimes wonder what would've happened if I would've made a different decision all those years ago...I may have been married, but I wouldn't have been happy.  By finding the strength to fight for my happiness then... I now get to have both.  I am so grateful for that.

Frenchie Friday!

Happy Frenchie Friday everyone!  Having a Frenchie is something special.  Yes, you are probably saying I'm biased because of my "Stella"....but if you talk to any Frenchie owner...you will get the same response.

I worked at Veterinary Clinics for 17 years and I honestly believe that French Bulldogs are special.  They are a special breed like no other.  Don't get me wrong, I understand how much you love your dog.  All dogs are so unique and special...but Frenchies are the ultimate companion dog.  That's what they were bred for...to be a companion.  That's what they do.  They are not a working dog.  They are not a sporting dog.  They are not a hunting dog.  They are not a herding dog.  They fit into the "Non Sporting" category at dog shows because they are exactly that.  They were bred to love you.  That's all they do.

Frenchies are not the dog for everyone.  You have to know what you're getting into when you get a Frenchie as they are like having a child.  But the Frenchie owner's I've known wouldn't have it any other way.  I've become one of them.  My husband has had many dog breeds and he says he never wants to not have a Frenchie again.  Ever.

I wanted to share some fun, funny Frenchie pictures just because....just because they are so darn cute!  Enjoy these little Frog Dogs...Bat Dogs...Piggy's!

Fitness for Health vs. Fitness for Vanity

Have you ever stopped to think about why you are exercising?  Lately I've been thinking about this more and more...

I used to work out for one reason.  To look good.  I think when we are younger we don't think as much about exercising for "health" because we feel invincible.  As we get older, we still want to look good, but that comes as an added bonus to being "healthy".  For exercising to be part of my "lifestyle"...I realized I had to change my mindset about exercise, or else it wouldn't last.  So I did.

I think it's so important to change our mindset about the reason why we exercise to have a healthy balance between health and vanity.  One of the things I love about the gym I've been going to is their philosophy.  Their workouts are designed to incorporate movements that will enhance daily tasks and boost your overall quality of life.

I found the following article on Urbanfitt that explains this subject so well that I'd like to share it with all of you.  By understanding the difference, I'm hoping it can help others embrace fitness as a "lifestyle", instead of a short-term goal.

The difference between fitness for health vs. fitness for vanity is pretty simple:

In training for health, we use exercise like medicine. We exercise in a way on any given day with a flexible approach so that we are giving our bodies exactly what they need in the moment. Exercise is not depleting and works to make our immune systems stronger, our sleep better quality, calms our nervous system and helps us also find a state of relaxation and peace of mind. We expect to feel energized after a workout, not like crashing on a couch. We look at exercise as a way to build chi, not a way to look better. If we have the energy to push ourselves harder than usual and our intuition is pointing us in this direction we go for it. If we feel depleted and our body feels leaden and heavier than usual, we let go of plans for an intense workout and work in a more restorative way. And in so doing, we will improve our vitality which will improve the way we look in the end anyway. It’s easier to stay the course when choosing to focus on health because their is no end goal. It is a way of being. Focusing on physical appearance while ignoring the spiritual and emotional issues we struggle with is not about health and is dysfunctional.

In training for vanity we set goals based on an external appearance. A certain size waist, bicep circumference, dress size. The underlying focus is that “life will be better when I achieve these goals”. I find that people who pursue fitness from this perspective don’t stay the course because they aren’t moving in a conscious way in alignment with their deepest selves. There’s a shorter term end goal. Once someone achieves this goal, then what? Will they ever be happy with the way they look? Or will there be something else to work on. We might find ourselves ignoring signals from our bodies to tell us to change course. Injuries, over training, constant colds or illnesses might hit us but we ignore our body telling us we aren’t helping it and instead, stay they course with an original plan that isn’t actually making us healthier. The typical way men train for vanity is in overdoing chest work to compromise upper body structural balance possibly leading to shoulder injury. The typical way women train for vanity is in avoiding muscle building activities or going on heavily restrictive diets that are nutritionally insufficient. I could name a plethora of fitness gurus who tap into people’s desire for this type of fitness but will bite my tongue.

I thought I’d share because I’ve been in both camps and have decided to choose the first option for the type of messaging I want to put out into the universe...

I'm excited to think of exercise in a new light.  Exercise can be any type of movement...it can be fun!  It doesn't have to feel like torture or work.  I think we should be liberated from the elliptical trainers and the treadmills...and get outside!

The next time you exercise, maybe you need to take it more seriously.  Instead of thinking... "I'm doing this to look good."  This makes me feel like, "Well, I must not look good now."  Instead, try this... say to yourself  "I'm doing this for my health and peace of mind...I'm saving my life."  It feels good.  That makes me feel happier now...not I'll be happy when...

I hope this makes you think about why you exercise and decide to have a healthy balance between health and vanity.  It's okay to still want to look good, I still do.  Just don't let that be the only reason.  Do it for health and peace of mind....the good news is, it will improve the way we look in the end anyway;)  We'll just be a whole lot happier on that journey.

Why your Grandparents didn't have food allergies...but you do.

It seems like every time I turn around these days I'm hearing about people having food allergies.  It's everywhere.

When I was in school, I don't remember having friends that had any dietary restrictions.  We all ate whatever we wanted and didn't carry "EpiPens" around in our backpacks.

What's changed?  Why are food allergies so prevalent today when they used to be so few and far between?

Once I started looking into the answer...it made sense.  No wonder food allergies are worsening with every generation.  They're not eating the way we used to.  They're not eating real food.  It's actually quite simple...

Here are the reasons our Grandparents didn't have food allergies...

  1. They ate seasonal, real food.  Food came from farms and small markets in the early 1900’s, and because food preservatives were not widely used yet, food was fresh. Because of the lack of processed food, their diets were nutrient dense allowing them to get the nutrition they needed from their food.For babies, breast milk was valued and it was always in season.
  2. They didn't diet and play restrictive games with their bodies and metabolism.  They ate food when food was available.  Our grandparents did not fall victim to fad diets, food marketing, calorie counting, and other detrimental dieting habits that are popular today (in part because the marketing infrastructure didn’t exist yet). Because of this they had a healthy metabolism, and ate according to their body’s needs and cravings.
  3. They cooked food at home, using traditional preparation methods from scratch.  Buying processed food was not an option, and eating out was a rare luxury. Lucky for our grandparents these habits actually increased their health.
  4. They didn't eat GMO's, food additives, stabilizers and thickeners.  Food was not yet treated with additives, antibiotics and hormones to help preserve shelf life and pad the pockets of food producers in the early 1900’s at the expense of the consumer’s health.
  5. They ate the whole animal that included mineral rich bone broth and organ meats.  Animal bones were saved or bought to make broths and soups, and organ meats always had a special place at the dinner table. These foods were valued for their medicinal properties, and never went to waste.
  6. They didn't go to the doctor if they felt sick or take prescription medications.  Doctor visits were saved for accidental injuries and life threatening illness.  When they got a fever, they waited it out. When they felt sick, they ate soups, broths and got lots of rest. They did not have their doctor or nurse on speed dial, and trusted the body’s natural healing process a whole lot more than we do today. Their food was medicine, whether they realized it or not.
  7. They spent lots of time outside.  Our grandparents didn’t have the choice to stay inside and play on their phones, computers and gaming systems. They played on the original play-station: bikes, swing-sets and good ol’ mother nature!

AND WHAT DO THESE THINGS HAVE TO DO WITH FOOD ALLERGIES?

Nutrition affects EVERY cell in our body. The health of our cells is dependent on diet and lifestyle. Cells create tissues, tissues create organs, and we are made up of a system of organs. If your nutrition is inadequate, the integrity of each cell, tissue and organ in your body will suffer, thus you may be MORE sensitive to certain foods.

-These answers are based on an article about food allergies from "Butter Nutrition".  I know this is a very simplistic list and is meant to "simply" get people think about what they are putting in their bodies and their families bodies.  I completely understand that food allergies are very real and this list is not intended to downplay their severity.
