Happy Frenchie Friday everyone!  Enjoy summer while it's still here.....Fall is right around the corner! summer-frenchie

"Stella" went for a nice long walk this morning, it was nice and cool.  As she was crunching through the many leaves that are already on the ground...it got me so excited for Fall!

Once October approaches every year, my husband laughs at me because I get so excited for the holidays!  I start to get "giddy"!

Today it's still Summer though...so enjoy this warm weather!  It's in the 80's here in California today!

Chocolate Coconut Scout Cookies

chocolate-coconut-scout-cookies Who doesn't love those famous boxes of Girl Scout cookies?  I happened to be a "Bluebird" back in the day.  Ah, to be a Bluebird back in the late 70's in L.A..  If I remember right, Bluebirds became Camp Fire Girls and Brownies became Girl Scouts.  Why did I choose one organization over the other?  I like to think is was my young fashion sense... The Bluebird uniforms were way cuter, period.  My Bluebird uniform was red, white and blue, tailored, and came with a cute little cap.  Brownies uniforms were...well, brown.  Anyway....I do remember selling boxes of cookies and I knew how to get it done quick!

I grew up near UCLA and my mom would take me to "sorority row" and I would go door to door in my smart looking Bluebird uniform and red knee-high socks pulled up high and I'd be out of cookies in no time flat!!

These cookies remind me of those coconut ones....what are they called?  Samoas?

These are TASTY, HEALTHY, CHEWY, EASY and HOMEMADE!

  • 1  1/4 cup unsweetened shredded coconut
  • 1/3 cup coconut sugar
  • 3 Tablespoons coconut oil, melted
  • 1 Tablespoon raw honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 cup dark chocolate chips
  1. Preheat oven to 350 degreees.  Line a baking sheet with parchment paper or a silicone mat.  (This was my first time using my new one!)         IMG_5892
  2. In a large bowl, stir together the coconut, coconut sugar, coconut oil, honey, egg, and vanilla extract.  Fold in the chocolate chips.
  3. Drop the dough by the heaping Tablespoon and form into balls and flatten into flat disks.  They will be sticky... just press it into the best circular shape you can;)  Makes 12.
  4. Bake 15 minutes, or until edges are golden brown.  Let cool before handling.

Even though my cookie peddling days are over...I'm happy I can still enjoy these!  It being #ThrowBackThursday and all.... I'll leave you with a visual...don't laugh, you know you have embarrassing photos from your youth too;)

I'm working on a new me...

a-new-me I'm working on a new me.  Why?  Because there's room for improvement.

Most people actually have pretty good intentions when it comes to health and fitness, but are lazy.  They want to live a healthy lifestyle, but it never seems to be the right time, right now.

They'll say things like, "I'll start Monday."  "I'll start after______."  "I'll start when bathing suit season comes around."  I'm here to tell you, the excuses will continue.  Do it now.  Right now.  It's the best time to start.  It's never going to be the perfect time...something will always come up.  Don't put it off any longer.

I always knew I could do better when it came to health and fitness.  But it was this thing that dangled out in the future..."One of these days I'm going to get really healthy and get in the best shape of my life.  Time passes... until you make someday TODAY.

So now, I am on a journey to get healthy and fit... now.  Not that the old me is bad, but there is always room for improvement.  It feels better to eat healthy than unhealthy.  It feels better to exercise than sit still.  It improves my mood dramatically to live a healthy lifestyle.

Yesterday I really noticed it.  My husband was off work and we took "Stella" for a long morning walk.  We got home and we both went our separate ways for a bit and worked out.  Then we went and played tennis!  When we were done, I said, "Wow, we've done nothing but exercise today and it hasn't felt like work... it's felt like fun!"  It felt good, I actually felt like I could breathe better.  That's because it's become a habit.  It's just part of our day.

My husband and I are enjoying tennis so much, it's been such a fun new hobby for us!  We started Labor Day weekend and we're improving!  We aren't great at it...but aren't terrible either.  Most importantly we have fun.  We've played the past 3 days in a row.  He had to tape my wrist yesterday because I'm sore, but I wanted to play so bad that it didn't matter I was in pain!

Of course I also had to go get some tennis skirts because now that we're going more often, I have to look fashionable doing it!  Right!?  :)

It's so silly that we used to like tennis, but haven't played in over 20 years!  Why not?  Is there anything that you used to love to do but just quit doing?  Especially if it's active and healthy... go do it!  Go play again!  Get moving and your body will thank you.

No matter how many mistakes you make or how slow your progress, you are still way ahead of everyone who isn't trying.  Don't try to be like anyone else.  Be YOU.  But be leaner, stronger, and healthier.  There's room for improvement, isn't there?  I know there was for me...

I'm working on a new me.  I'm not putting it off any longer.  Join me!!

Ben Harper

ben-harper-quote Music has always been a big part of my life.  I can remember when I was growing up...my parents always had music on.  For me, this is still one of my best memories as a child.  I can remember them playing Neil Diamond, ABBA, Fleetwood Mac and James Taylor.  It was always the first thing my dad did when he got up besides making coffee, he would turn on the stereo.  To this day, in my own house, silence feels strange to me.  If there is dead air in the house, I turn on music.

Along with that, I had an older brother.  I must admit... this did make me feel cooler than those who did not have this advantage.  My brother taught me about good music at a very young age.  He was almost five years older than me and I looked up to him so I absorbed what he listened to.  I learned to love Led Zeppelin, THE WHO, and Rush.  As I got older, I noticed that my friends who grew up with older brothers also had a love and appreciation for the same kind of music.  In high school, while some of our friends were listening to "pop"... New Kids On The Block, we were listening to The Doors and Leppelin.  To this day, I'm so grateful to have had an appreciation for good music at such a young age.  I still love to "get the Led out" to this day;)  Music can change your mood, motivate you while working out, take you back to a specific time in your life...it's magic like that.  I appreciate all genres of music, but my go-to has got to be folk these days.  I love classics, but usually turn my Pandora stations to Ben Harper, Avett Brothers, Iron & Wine, Nick Drake, Stevie Nicks, or Ray Lamontagne.

I have been to many concerts, since my first one, Tom Petty at age 13 or 14.  I have been hooked.  I can remember one concert in particular that I was more excited about than any other before...Pearl Jam in 1995.  I went to San Francisco to see them, they played one song and Eddie Vedder got sick and couldn't continue.  Neil Young filled in for them....which was cool, but I was there for Pearl Jam!  They made up the show at a later date in San Jose...November of 1995.  One of the best shows ever.  My friend and I were waiting and hoping they would play "Indifference", our favorite song.  When they hadn't played it, we were truly bummed.  Well, that ended up being their last, encore song.  We almost cried we were so excited.  We had an inside joke that he played it just for us.

Well, that night, their opening act was Ben Harper.  I had never heard of him but as soon as I heard his voice, I was forever a fan.  His voice was mesmerizing....one of those voices that is even better live.  One of those raw voices that gets under your skin and gives you chills.  You can feel how much he loves what he does.  Besides Stevie Nicks of course... he is my all time favorite musician.  Depending on the song, one could call his music rock & roll, folk, reggae, even gospel.  He's been singing "Hallelujah" on his acoustic tour, it's fantastic.

Since that day, I have been going to Ben Harper shows for almost 20 years, from little bars in Santa Cruz to big venues in NYC and SF.  I've lost count how many times I've seen him now, but tonight will make one more.  He is coming to The Green Music Center at Sonoma State University, only 15 minutes from my house!  I have a friend who works at Sonoma State who told me about it as soon as it was announced and got us front row, center tickets the minute they went on sale!  Needless to say, I am SO excited!  One of the best shows I've ever seen of his was at Carnegie Hall in New York City.  It was an all acoustic show.  We were in the "nose bleed" seats.  He played 12 different guitars including the slide guitar, which he's famous for.  The acoustics along with his voice were amazing.  That show was particularly special because he played THE Pearl Jam song that Eddie Vedder encored that very first night I ever saw him in 1995..."Indifference".  It kind of brought it full circle, one of those cool moments in life that I'll remember forever.  I was with the same friend that I was with at that very first show...we knew that song was being played just for us...once again.

Most people, honestly, have never heard of Ben Harper when I turn them onto him... he's never been very "main stream".  He was married to Laura Dern and they have children together.  I was sad to hear they are no longer together...I love her as an actress and always have.  I thought they made a very cute couple.  Two things are sure to happen when people get to know me.... you'll learn to like champagne...and you will be introduced to Ben Harper music.

Sometimes you hear music that really moves you.  When my husband first heard Ben Harper's song "With My Own Two Hands", it touched him because he's a chiropractor...so he heard something different in it than I ever had.  That's what's so special about music, it's personal.  Music is one thing that really bonded my husband and I early on...we love music.  Even though he's ten years older than me, we have very similar taste in music so where there could have been a palpable age gap, it's actually a wonderful bond we have.  We can sit and listen to old music together forever.

I put Ben Harper's "By My Side" lyrics on my wedding CD as that has always been a special song for my husband and I.  I've only ever heard him sing it once in concert.  He sang it for a couple at Carnegie Hall, it was their anniversary and they had requested it.

Maybe, just maybe, he'll play it tonight...just for us...;)

Carrot Cake Cupcakes

carrot-cake-cupcakes These Carrot Cake Cupcakes are moist with just the right amount of sweetness.  They have a great consistency that are delicious on their own... but  if you're looking for that extra special treat, add the lemon-coconut frosting.

Ingredients:

CUPCAKES:  Makes 12 cupcakes

  • 4 large eggs, at room temperature
  • 1/2 cup raw honey
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 cup coconut flour, sifted
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon sea salt
  • 1  1/4 cups grated carrots
  • 1/4 cup chopped raisins or chopped pecans (optional)

FROSTING:

  • 1/4 cup coconut butter (also known as creamed coconut)
  • 3 Tablespoons honey
  • 1 Tablespoon coconut oil, softened
  • 1 Tablespoon full-fat coconut milk
  • 1/2 teaspoon fresh lemon juice
  • 1/4 teaspoon apple cider vinegar

FOR GARNISH:

  • 1/4 cup unsweetened shredded coconut

Instructions:

  1. Preheat oven to 350 degrees.  Line muffin tin with paper liners.
  2. Beat the eggs, honey, coconut oil, and vanilla in the bowl of a stand mixer on medium speed for about 30 seconds, or use an electric hand mixer.
  3. Add the coconut flour, baking soda, spices, and salt and beat again to combine fully.  Fold in the carrots and, if desired, the raisins or pecans.
  4. Bake the cupcakes for 18-20 minutes, until a toothpick inserted in the center comes out clean.  Remove the cupcakes from the pan and allow to cool completely on a wire rack before serving or frosting.
  5. For the frosting, combine all of the ingredients in a small food processor or in the bowl of a stand mixer and beat until smooth.  If the frosting is too thin, place in the refrigerator for 10 minutes, then beat again.  Top with the shredded coconut.

A couple of notes on my experience....

I happen to always keep a couple of cans of  coconut milk in the refrigerator, you know, in case I need to make coconut milk whipped cream.... so I used cold, separated coconut milk.  This may have helped my frosting be a thicker consistency.

This is the Creamed Coconut I found...I couldn't find "coconut butter", but found this at Sprouts near the nut butters....I did not melt it before using it.  It didn't say, so I just scooped it out solid.

This is how my cupcakes looked while they were cooling.  I added raisins and pecans... why not?  ;)

Here is how my frosting looked after mixing.  I used my Cuisinart food processor.  It was a good consistency.  The small chunks from the creamed coconut melted and mixed smooth after stirring.  I doubled the frosting recipe.  It frosted all 12 cupcakes with the amount of the ones in the picture, so I was glad I did;)

I topped with small and large bits of coconut.  Enjoy!  My husband LOVED these.
